Whisky from sherry casks has become much more popular in the last decade. The main reason for this is the steadily increasing demand for high-quality single malts.
Another reason for the price increase is that the number of sherry casks needed for storage has not increased to the same extent. Distilleries now pay five times as much for empty sherry barrels as for an ex-bourbon barrel.
